½ cup Red Lentils (rinsed and drained)
½ cup Split Peas (rinsed and drained)
1 Sweet Potato
1 Yellow Onion
1 Garlic Bulb (8-10 cloves)
2 tablespoon Dried Basil
1 tablespoon Red Curry Powder + 1 teaspoon
2 tablespoon Dried Parsley
1 teaspoon Red Chili Flakes (optional)
2 large cans (28 oz) Diced or Crushed Tomatoes (substitute fresh tomatoes)
1 tablespoon Garlic Bouillon
1 tablespoon Vegetable Bouillon
3 cups Filtered Water
1 tablespoon Coconut Nectar (substitute maple syrup or cane sugar)
⅓ cup Dry Red Wine (substitute water)
2 Bay Leaves
2 teaspoon Pink Salt (season to your taste preference)
15 oz Coconut Milk
2 cups Spinach (substitute kale or any mixed greens)

Fresh Italian Parsley
Drizzle of Coconut Milk
Sprinkling of Red Chili Flakes

1. Peel potato, onion and garlic. Chop potato into small chunks. Chop onion and garlic.
2. To the INSTANT POT, add potatoes, onion, garlic, lentils, split peas, bouillon, dried spices and water and stir. Add tomatoes, coconut nectar, bay leaves. Stir gently. Close the lid and set to HIGH pressure for 25 minutes. Allow 10 minutes of natural pressure. Perform a quick release. Reserve a cup or two of the chunky mixture for topping each serving of soup (if desired). Add coconut milk and greens. Using an immersion blender blend to desired consistency (transfer to a blender if desired). To serve, top each bowl with a few tablespoons of reserved mixture, a drizzle of coconut milk and fresh parsley. Enjoy!

[Music] Hey guys it's tara And welcome back to another video and Another Super delicious instant pot recipe if You're anything like me You're super busy and you just want Something delicious Nutritious and ready in a matter of Minutes with minimal Effort so today i've got you covered We're gonna make a lentil potato and Tomato soup That is not only a dump and go recipe so It's Really easy to make but it is so Incredibly Delicious perfect to take to work to School Eat at home it freezes beautifully and You guys are gonna absolutely Love it before we get started if you Have not already i would love for you to Be a part of this community you do that By hitting the red subscribe button That's right below this video and be Sure to click the bell icon that way You're notified each time i post A new video if you guys are ready to Make this super Delicious dump and go instant pot recipe Smash that like button and let's jump Right into the video here are the Ingredients we'll be using today a

Complete list will be in the description Box below so we're going to start by Soaking our lentils and split peas Then i've rinsed and drained them then I'm grabbing a sweet potato And i'm just peeling off all of the Skins You can also use a russet potato or an Idaho potato or any other kind of potato That you like I'm grabbing a large yellow onion Removing the skins And then i'm grabbing an entire garlic Bulb I'm going to use most of these cloves I'd say you need at least eight i prefer About 10. Next we're going to chop everything up So i'm looking to just chop everything Into roughly the same size it does not Have to be perfect Do this for the potato and then grab the Onion I love these knives i decided to try out My cleaver These knives i absolutely love these Knives i will link them Below in the description box Never ever ever wipe your finger along a Knife I did i cut my finger the cleaver is Extremely sharp Now i'm smashing down the garlic so you Can easily remove the skins

And then i'm just going to roughly chop This as well you could also just throw All of this Inside like the onion and the garlic Inside of a food processor and just Pulse it now we're grabbing our instant Pot we're gonna throw in Our sweet potatoes our onion You could also buy already chopped sweet Potatoes and onion to make it even Easier Garlic you could use already minced Garlic from the store but i like the Flavor of fresh garlic best Next we're going to add our split peas You can substitute brown lentils or any Other kind of legume that you prefer Add our red lentils [Music] Next we're going to add some bouillon I'm using a combination of vegetable and Garlic bouillon You can use all vegetable all garlic you Could even use Chicken stock if you prefer now we're Going to add some water Our dried spices Give everything a good stir [Music] That's looking really good next we're Going to add the tomatoes I'm using canned tomatoes because my Pantry is completely Packed with canned goods and i didn't

Have any fresh tomatoes If you have fresh tomatoes by all means Use them Your soup will be delicious [Music] I'm using a combination of fire roasted Tomatoes And just classic crushed tomatoes you Can use Any kind that you prefer some bay leaves And then just using the back of your Spoon just kind of push it underneath The mixture Now i didn't have any sugar on hand so i Decided to try this coconut nectar I gotta tell you guys this was so Incredibly delicious You could substitute maple syrup or cane Sugar whatever you've got on hand of Course i'm drinking a dry red And i decided to add some to this Delicious soup if you want to keep this Alcohol free you could just add a little Bit more water Which is what i decided to do anyhow I'm not sure what happened to the clip Of placing the lid on but when you put The lid on make sure it's set to ceiling Set it to high pressure for 25 minutes When it's finished we're going to allow 10 minutes of natural pressure Open up the lid We are going to fish out those bay Leaves

They're not dangerous to eat but you Really don't want to chew these [Music] I absolutely love the texture of this Soup So i decided to remove some of this and Set it aside in a bowl so i could top Each Of my jars of soup with some of this Mixture And we're gonna add some coconut milk I'm using coconut milk because I have it in my pantry and i love the Nutritional benefits that it provides As well as keeping the soup vegan so Everyone i know will be able to enjoy it You can of course substitute some either Heavy cream or milk whatever kind of Milk Plant-based or not plant-based that you Prefer To bump up the nutrition we're going to Add some greens this is a mix Of different types of like power greens You can use anything That you have on hand Then i'm grabbing my immersion blender These are super handy you could also Transfer this to a regular blender or You could just leave it chunky i decided To add just a little bit of pink Salt the rest of the can of coconut milk And some red Chili flakes i love heat if you don't

Like heat you can leave this out To serve this i like to add a drizzle of Coconut milk Some of the mixture that we set aside And some fresh Italian parsley [Music] I like to store my servings in Individual glass containers That's just my preferred method you can Of course Store this in one larger container But for me this works the best that way I can freeze them And whenever i know i'm gonna want a Delicious Lunch or dinner i can simply take out my Serving And it's ready to go you guys have got To try this recipe I hope you enjoyed today's video and That you have a chance to try it I'm going to leave a playlist of more Delicious recipes On the screen over here if you'd like to Check that out thanks so much for Watching and i will see you in the next Video Bye guys
