LENTIL & TOMATO SOUP│SIMPLE DUMP and GO RECIPE│INSTANT POT & STOVE TOP
Easy quick meals make life so much simpler. This is a dump and go recipe that is super flavorful and also healthy. I’m making this soup in my INSTANT POT, but if you don’t have an INSTANT POT you can still make this recipe. Complete instructions for both methods below. INGREDIENTS:
1 cup Red Lentils (rinsed)
⅓ cup Green (Fancy) Lentils (rinsed)
2 28 oz cans Tomatoes
½ cup Dry Red Wine (substitute with broth)
6 Garlic Cloves (chopped)
1 Yellow Onion (chopped)
1 tablespoon Tomato Paste
1 teaspoon Pink Salt
1 teaspoon Cane Sugar (optional)
1 teaspoon Dried Basil
1 teaspoon Dried Parsley
2 Bay Leaves
¾ teaspoon Red Chili Flakes (optional)
1 tablespoon Garlic Bouillon
1 tablespoon Vegetable Bouillon
4 cups Filtered Water
2 oz Fresh Spinach
½ oz Fresh Basil
½ oz Fresh Parsley
1 teaspoon Ground Pepper
¼ cup Low Fat Coconut Milk
1 teaspoon Pink Salt (optional)
INSTANT POT INSTRUCTIONS:
1. Add onion, garlic, tomatoes, lentils and dried spices to the instant pot, along with bouillon & water. Set instant pot to HIGH pressure for 18 minutes. Allow 10 minutes of natural pressure and then perform a quick release.
2. Add spinach, fresh herbs and coconut milk to the pot and stir. Using an immersion blender, blend until desired consistency. Ladle into bowls and top with a drizzle of coconut milk, more red chili flakes, and fresh herbs. Enjoy!
STOVE TOP INSTRUCTIONS:
1. Add onion, garlic, tomatoes, lentils and dried spices to a large pot along with bouillon & water. Bring to a boil and then simmer for one hour.
2. Add spinach, fresh herbs and coconut milk to the pot and stir. Using an immersion blender, blend until desired consistency. Ladle into bowls and top with a drizzle of coconut milk, more red chili flakes, and fresh herbs. Enjoy

Chopped onion and garlic followed by our Rinsed and drained lentils I'm using a Combination of both red and green Lentils I love the textural difference that this Provides you can of course use just all Red all green or any other kind of Lentil that you prefer next we're going To add our canned tomatoes I love the Intense flavor of San Marzano tomatoes They're both super sweet and rich Tasting and also less acidic but you can Use any kind of canned tomatoes that you Prefer you can also mix it up and add One can of san marzano and one can of Fire roasted tomatoes of course I am Drinking a delicious dry red wine I love To add wine to my soups it provides such A depth of flavor I'm using a Cabernet Sauvignon dry red wine you can use any Kind of red wine that you like or if you Don't want to use wine you can of course Substitute More broth it will still be delicious Next we're going to add some pink salt And some pure cane sugar optional but Highly recommended then we're gonna add Some dried basil and some dried parsley Some red chili flakes leave this out if You don't like heat about a tablespoon Of tomato paste and then I'm gonna use Both garlic bouillon and vegetable Bullion you can also just use broth or Just use all garlic or all vegetable
Bouillon two bay leaves and then we're Gonna add our four cups of filtered Water super super simple recipe I'm Gonna give everything just a quick stir Then we're gonna make sure the silicone Ring is on and we're gonna close the lid We're gonna set our instant pot to high Pressure for 18 minutes then we're gonna Allow 10 minutes of natural pressure and Then we're gonna perform a quick release As soon as the pin drops it's safe to Open open up our lid now we're gonna Remove the bay leaves definitely want to Remove these I love making soups inside of the Instant pot because it's so incredibly Easy and infuses so much flavor in such A short period of time now we're going To add some greens to this so I'm using About two cups of fresh baby spinach Then we're gonna add some basil and some Parsley I love adding fresh herbs right At the end of cooking it adds so much Flavor to the soup I'm using basil and Parsley you can also use thyme oregano Rosemary use any kind of herbs that you Like you can also add kale or Swiss Chard that would be delicious Everything is wilting very nicely next We're gonna add our coconut milk coconut Milk adds a creaminess to the soup while Still keeping it dairy free this soup Will not taste like coconut but you can Of course swap in any other type of milk
Or cream that you prefer now it's time For us to blend this soup I'm gonna use My immersion blender because it's super Easy you can also transfer to a regular Blender and blend it as much or as Little as you like this is a good time For you to taste your soup see if it Needs any additional seasoning I decided To add a little bit more salt and some Fresh ground pepper this soup reheats Well and freezes beautifully I topped it With a little swirl of coconut milk and Some more fresh herbs so incredibly Delicious if you liked this video you Guys are gonna want to check out my Instant pot recipe playlist I'm gonna Leave it right here for you go ahead and Click the video on the screen and I will See you over there [Music]
