INSTANT POT Vegetarian Pasta Recipe│INSTANT POT PASTA For Lunch → Healthy Recipes You Will Love

Today we are making a vegetarian Instant Pot pasta recipe that is so flavorful and super easy to make! This recipe is also healthy – so it’s perfect for a fast and easy lunch or dinner. It’s delicious hot or cold. I hope you enjoy!

6 oz Portobello Mushrooms
8 oz Pasta
2 cups Spinach
1 cup Cherry Tomatoes
1 tablespoon Dried Parsley
1 teaspoon Pink Salt
½ teaspoon Black Pepper
4 oz Feta Cheese (substitute goat or pecorino romano)
⅓ cup Sundried Tomatoes
15 oz Chickpeas
½ cup chopped Asparagus (optional)
Handful Fresh Basil
1 ½ cups White Wine (substitute broth)
2 cups Filtered Water (may need a little more or less)
Salt and Pepper to Taste
A Few Sprays Of Olive Oil

Slice tomatoes in half. Chop sundried tomatoes into small pieces. Slice basil thinly. Chop mushrooms into small pieces. Set Instant Pot to sauté on HIGH. Add rinsed and drained chickpeas. Dry sauté for 1-2 minutes. Add a spray of olive oil. Add salt and pepper to taste. When they are to your desired level of crispness, remove and set aside. Add mushrooms. Allow to cook down for 1-2 minutes. Then add some salt and pepper. Add a spray of oil. Remove and set aside. If using asparagus, add to the pot and sauté for 1-2 minutes. Add salt and pepper, and a spray of oil. Remove and set aside. Add wine to the pot and bring to a simmer. Deglaze the bottom of the pot! Then, add pasta to the pot. Add sundried tomatoes, and half of the halved cherry tomatoes. Add the dried spices, then top with water (enough to cover and submerge the pasta). Press cancel on the instant pot and then set to HIGH pressure for 3 minutes. Allow 2-3 minutes of natural pressure, then perform a quick release. When the pin drops open the lid and stir. Add the spinach, the rest of the tomatoes, the chickpeas, the asparagus, the mushrooms, the fresh basil, then add the feta. Stir and allow feta to melt. Plate up, top with your favorite toppings! More cheese, fresh herbs, lemon. Enjoy!

Flavorful and nutritious pasta dish Made entirely in the instant pot you Guys are definitely going to want to Watch this video [Music] This recipe is so incredibly simple and Great to use up whatever you've got Inside of your pantry So i have these cherry tomatoes i've Just halved Some sun-dried tomatoes these are not Packed in oil but you can use the oil Ones if you like Fresh basil chiffonade and some Mushrooms I'm just chopping them up grab your Instant pot set it to saute on high And i'm adding one can of drained and Rinsed chickpeas Of course these are already cooked so All we're doing is toasting them up This is such a great hack you guys know I love my oil sprayer you use Less oil for the same effect absolutely Love it Next i'm gonna hit it with a little bit Of salt and pepper keeping this Super simple sometimes simple is best Guys After you get them to the toastiness That you love Remove them from the instant pot look at This cooked Perfectly set the chickpeas aside

And i'm adding in my chopped up Mushrooms i've used portobello mushrooms Here but you use any kind that you like And after they've cooked down just a Little bit i'm hitting it with some salt And pepper Just like before along with the little Spritz of my olive oil this is the first Time you're watching a recipe video of Mine Welcome to my channel i'm tara and i Post New recipe videos every sunday i Found asparagus buried in the bottom of My drawer in the fridge And i thought i would throw this in use Whatever You have on hand hit it with a little Bit of salt and pepper Add another couple of spritzes of the Olive oil if you like And when it gets to be the doneness that You prefer set it aside And now i'm using some dry white wine You guys if you know me You know i love wine you could use Vegetable stocks chicken stock Whatever you've got on hand bring it to A gentle simmer This is going to do the work for you you Need to deglaze the bottom of this pot Guys Do not skip this step grab your pasta I love this bonza rigatoni it's chickpea

Pasta packed with protein so good Add in your sun-dried tomatoes that You've chopped up Along with some about half of the cherry Tomatoes you want to cook some of them Down but you want to save some of these Guys For after it cooks your dried spices Salt pepper and parsley how easy is that Then you're going to add the water i'm Only using enough So everything is submerged super easy Kind of press it down just a little bit To make sure it's all underneath the Water you don't have to stir it Put the lid on make sure it's set to Sealing and we're going to cook this on High pressure for only three minutes i Allowed about three minutes of natural Pressure And then i performed a quick release Open up the lid this is like my favorite Part i love How easy it is to make a complete meal In only a matter of minutes Add in the fresh spinach those reserved Cherry tomatoes The chickpeas oops drop that in there I thought i would leave that clip in so You could see nobody's perfect The asparagus the mushrooms Add that fresh basil i love using fresh Herbs if you don't have it you could use Dried
