4 ounce Salmon Filet
5 Cloves of Garlic
Drizzle of Olive Oil
Salt and Pepper to taste
1 cup of Water
Handful of Asparagus
2 tablespoons Butter
¼ cup Unsweetened Almond Milk (or milk of choice)
1. Zest and slice lemon. Dice shallot. Cut off top of garlic bulb and place on aluminum foil. Drizzle top with olive oil and fold packet. Place salmon filet on aluminum foil and drizzle with olive oil. Top with half the shallots and all the zest. Add salt and pepper. Fold packet. Chop cauliflower head into florets. Add remaining shallots on a piece of aluminum foil and drizzle with olive oil, salt and pepper. Close packet.
2. Add water to instant pot. Place a trivet inside and then a steamer basket on top. Add cauliflower to steamer basket. Place the 3 foil packets on top of cauliflower. Close the lid (make sure silicone ring is on). Set instant pot to HIGH pressure for 3 minutes. When its finished cooking, allow 3 minutes of natural pressure and then do a quick release. Remove foil packets. Remove steamer basket and trivet. Empty water from the pot and add the cauliflower into the pot. Open foil packets. Add butter, shallots in foil, and 5 garlic cloves (mince if necessary). Using a whisk, potato masher or mixer whip cauliflower until desired consistency. Add almond milk (or milk of choice).
3. Chop ends off asparagus and discard or save for making stock. Chop asparagus into equal sections. In a frying pan on the stove add a drizzle of olive oil and then add asparagus. Use salt and pepper to taste. Saute on medium high for 1 minute. Reduce heat to low and saute until desired tenderness. Plate up salmon and add a drizzle of reserved lemon mixture to the top from the packet. Plate up cauliflower mash and asparagus. Enjoy!

And you guys are going to absolutely Love it hey guys welcome back to my Channel if this is your first time here My name is Tara I've been asking each Week up in the cards what you'd like to See next you guys are really interested In more instant pot recipe videos so Today we are gonna be making a Super-easy salmon cooked in the instant Pot with some cauliflower mash and Asparagus you guys are going to Absolutely love it before we get started If you have not already I would love for You to be a part of this community you Do that by hitting the red subscribe Button that's right below this video and Be sure to hit the bell icon that way You're notified each time I post a new Video if you guys are ready to make some Incredibly delicious salmon in the Instant pot then keep on watching we are Gonna start with our cauliflower so First we're gonna just kind of tear off The bottom of it and then we are gonna Cut this into florets we don't really Have to be too particular at this point And then I'm just gonna rinse everything In my salad spinner really well and then We're gonna grab a shallot so I'm just Taking the skin off of this and then I'm Just gonna dice it up If you don't have a shallot you can also Use either a yellow onion or red onion Or even onion powder if you don't have
Any of these options then we're gonna Grab a lemon and I'm gonna zest this First it's much easier to zest it before You slice it and then I'm gonna just Slice this up I'm using an organic lemon Here because I exhausted it and here's My salmon this salmon came frozen and I Just defrosted it in a bowl of cold Water but you can use fresh salmon if You have it then I'm just gonna season It with some salt and pepper I'm using a Wild caught salmon here and then we're Going to just put the shallots about Half of them right on top of the salmon Along with the lemon zest and then a Couple of lemon slices and we're kind of Just making a packet a foil pack next We're gonna grab a head of garlic and I'm gonna just slice the top off and put Some olive oil on it we only need a few Cloves of this but it's very very handy To have this in the fridge and I'm Taking the remaining shallots putting it In another foil packet with some olive Oil and some salt and pepper and we're Gonna put this on the cauliflower mash Once it's finished and then I'm gonna Reserve these two lemon slices for Garnish for when we're finished so now We're going to take a trivet put it in The bottom of the instant pot put a cup Of just water with a steamer basket Whatever kind you have and all of the Cauliflower florets so I'm kind of just
Wedging them in here and then we're Gonna take these packets and we're gonna Kind of just place them on top it Doesn't really matter how you do this Just so long as it fits and you can shut The lid so making sure our silicone ring Is on we're placing the lid on and then We're going to set our instant pot to High pressure for three minutes We are gonna be cooking the asparagus Separately on the stove I don't Recommend placing it in the instant pot To cook at the same time because it will Be way too overcooked it's super easy to Saute this on the side if you don't have Asparagus you want to sub in green beans Make a simple side salad it's up to you Where you gonna start by cutting off the Bottom of the asparagus this part is Very tough you can save this to make a Stock later then we're going to just cut This into equal sized portions set our Frying pan to about medium-high with a Drizzle of olive oil And just throw it in there and then I'm Gonna put some salt some Himalayan pink Salt and some black pepper Inside of the frying pan I love a little Bit of heat so I'm adding a little bit Of crushed red pepper flakes you can Leave this out if you don't like heat And we're really just looking just to Get this just slightly softened so I've Set my frying pan to low at this point
And after about a couple of minutes it's Just about perfect for me Now the instant pot is done and we're Gonna allow three minutes of natural Pressure so three minutes to cook three Minutes to let it naturally depressurize And then we're gonna do a quick release And once the pin drops we are good to Open the lid so now we're going to Remove the packets set them over on the Side this cauliflower is cooked Absolutely perfect in order for us to Make a cauliflower mash so now we remove The trivet I emptied the water out of The instant pot and I put the Cauliflower back in I'm using my fork Just to mash it up to get it started and Then I'm adding just about a couple of Tablespoons of butter you can use olive Oil if you prefer and I'm adding some Salt and pepper next we're going to open Up the foil packet with the garlic we Only need about five cloves use as much Or as little as you like I suggest using A garlic press instead of just throwing It in like I did and we're also opening Up the shallot pack putting everything Inside of there I'm using a hand mixer Here you can also use a whisk or potato Masher and just get it to about the Consistency the Like I decided to add a little bit of Unsweetened almond milk you can ask some Heavy cream you can add some milk
Whatever you like To get it to the consistency that you Prefer this looks so much like mashed Potatoes it really is kind of incredible So we're gonna open up the foil packet With the salmon you're gonna place the Salmon on the plate and taking a little Bit of the juice that was in the foil Packet of the salmon I'm gonna put that Right on top with some fresh Italian Parsley and now I have got to taste this Look at how incredibly perfect the Salmon flakes cooked absolutely Perfectly tastes delicious Incredibly healthy fast easy to prepare You guys are going to absolutely love This low carb high protein recipe what Did you think of today's video drop me a Comment below let me know either a Recipe idea you have a video series You're interested in are you interested In more fish recipes chicken beef pasta Just let me know I would love to hear From you if you liked today's video and You want to see more like it be sure to Hit that like button and share this Video with all of your friends your Family your co-workers or anyone else That you know that is interested in Healthy but delicious recipes thanks so Much for watching and I will see you in The next video bye guys [Music]
