Instant pot beef roast is super easy to make, flavorful, and so incredibly tender. This is a perfect recipe for meal prepping, enjoyed either shredded or sliced. Perfect for salads, tacos, nachos, quesadillas, empanadillas, or simply served with veggies and potatoes. The use of cilantro infuses such a delicious flavor, but if you do not like cilantro – simply swap it out for parsley. You can dump all the ingredients in and cook it, but I highly recommend sauteing the beef for maximum flavor. In only minutes of preparation your roast will cook, unattended, and in less than 2 hours you will have the most deliciously tender roast beef. What is your favorite way of serving roast beef? 1 Yellow Onion
1 Garlic Bulb
1 Bunch Cilantro
1 teaspoon Black Pepper
1 teaspoon Pink Salt
1 ½ tablespoon Olive Oil
1 ½ cups Beef Broth
3 ½ – 5 pound Top Round Beef Roast
Salt & Pepper to Taste

1. Chop onion, garlic and cilantro. Set INSTANT POT to sauté on high and add olive oil. When hot, add beef. Season with salt and pepper. Brown on one side for 1-2 minutes. Flip over and cook for 1 minute. Season second side with salt and pepper. Remove beef and set aside. Add onions and sauté for 2 minutes. Deglaze with a splash of beef broth. Add chopped garlic and cilantro. Saute for 30 seconds. Add beef, the rest of the broth, and the teaspoon each of salt and pepper. Make sure silicone ring is on, and place on the lid. Hit cancel on the INSTANT POT and set to HIGH PRESSURE for an hour and 15 minutes. Allow to naturally release pressure for 30 minutes. If necessary, perform a quick release. Remove beef and shred or slice. Reserve broth for gravy or pour over shredded beef. Enjoy!

Even easier both the onion and the Garlic are gonna cook with the roast at The same time so they're gonna break Down just perfectly now we're gonna grab The cilantro and just give it a rough Chop I'm using cilantro in this recipe That's somewhat unconventional in a beef Roast if you are one of the 10% of People that do not like cilantro swap it Out and put in some Italian parsley and It will be delicious but if you like Cilantro I highly recommend using it Here not only is it going to give this Beef roast a super delicious flavor but Next week we are making empanadas So infusing the cilantro inside of the Beef now is gonna take this recipe Over-the-top Then we're gonna grab our instant pot Set it to saute on high add a drizzle of Olive oil and as soon as it gets hot We're gonna place our meat right in top It with a little bit of salt and pepper We're looking to really sear this meat It's gonna have such a great flavor by Doing this look at that sear it's Absolutely perfect now we're gonna throw All of the onions in and just keep Stirring it around I like to add just a Splash of the broth in and deglaze the Pot here this is highly important so you Do not get the burn signal so just keep Scraping the bottom of the pot then We're gonna add our garlic I didn't want

To add it earlier because I didn't want It to burn and our cilantro and our salt And pepper and we're just gonna stir all Of this together scrape down the sides Because some is probably gonna get stuck On there then add your meat in and the Juices and the rest of your broth now We're gonna grab our lid make sure the Silicone ring is on hit cancel on the Instant pot and set it to high pressure For an hour and 15 minutes we're gonna Allow 30 minutes for a natural pressure Release my pin dropped right before the 30 minutes so I did not have to perform A quick release then we're gonna remove The roast I highly recommend saving the Broth that is inside of the instant pot If you want to make a gravy you can go Ahead and add a cornstarch slurry and Heat the broth back up to boiling so It'll thicken I like to use it just like It is and save it inside of a mason jar Or you can pour it directly onto the Shredded beef roast and store it in the Refrigerator like that it will be so Incredibly delicious this beef roast is Cooked absolutely perfect I'm going to Shred this beef roast because that is How I like it It's perfect for sandwiches nachos tacos And Punta Diaz if you prefer you can go Ahead and slice it up and just serve it That way either way it will be delicious This beef is so easy to shred with just
