INGREDIENTS:
1 medium Eggplant
1 cup Ricotta (whole milk)
1 Large Egg
1 teaspoon Dried Basil
1 teaspoon Dried Parsley
½ teaspoon Pink Salt
24 ounces Tomato Sauce
8 ounces Mozzarella (fresh is best)
4 ounces Pecorino Romano grated (substitute parmesan)
1 cup Spinach
Black Pepper to taste
Fresh Basil and Parsley to garnish (optional)
1 cup water (to pressurize instant pot)

INSTRUCTIONS:
Slice eggplant into ½ inch rounds and place on a cutting board. Salt both sides and let stand for 30 minutes. Rinse and pat dry. Combine ricotta, dried spices, egg and grated cheese in a medium bowl and mix well. Spray pan with nonstick spray. Add a few spoonfuls of sauce to cover the bottom. Layer eggplant (doesn’t have to be perfect) on the bottom. Top with ricotta mixture. Tear off some spinach and add to the eggplant. Top with a few chunks of mozzarella. Add a few spoonfuls of sauce. Then repeat…layer eggplant, ricotta mixture, etc. For the top layer add only sauce, and then top with mozzarella. Cover with aluminum foil. Add water to the instant pot and a trivet. Place a sling on the trivet. Place the pan on top. Close the lid set to sealing, HIGH pressure for 12 minutes. Allow 5 minutes of natural pressure and then perform a quick release. Remove the pan and uncover. Broil for 5 minutes (optional but recommended). Top with parsley and basil and enjoy!

[Music] Hey guys it's tara and welcome back to Another Video and another super delicious Instant pot recipe Thanksgiving is fast approaching so i Thought today We would make a classic italian dish Eggplant parmesan except we're going to Use our instant pot so it couldn't get Any Simpler before we get started if you Have not already i would love for you to Be a part of this community You do that by hitting the red subscribe Button that's right below this video And be sure to click the bell icon that Way you're notified each time i post A new video if you guys are ready to Make this super delicious Eggplant parmesan smash that like button And let's jump Right into the video [Music] We're going to start with our eggplant So i've rinsed it And now i'm slicing it into one-half Inch rounds Then i'm laying it out on my cutting Board in a single Layer and i'm going to grab some Himalayan pink salt i've always salted My eggplant prior to making eggplant Parmesan

There is a lot of controversy over Whether or not to salt Your eggplant so if you do try it not Salting it Leave a comment below and let everyone Know how it turned out I'm applying a light layer of salt to Both sides of the eggplant Now i'm grabbing my cheese this is Pecorino romano It's my favorite type of cheese to grate You could also use parmesan or Regular romano and in a small bowl i'm Cracking in One large egg i'm whisking it up And now i'm going to grab my regatta i'm Using whole milk regatta i highly Recommend Using whole milk you could use part scam If you prefer And i am going to add in my dried spices A complete list of all of the Ingredients will be in the description Box below I added some fresh pepper and that Cheese that we just grated And i'm just stirring everything Together this recipe comes together Really quickly look at that so perfect Next we're going to grab our mozzarella This is a fresh mozzarella highly Recommend using Fresh mozzarella and i'm just tearing it Into little bite-sized pieces

Now it's time for us to rinse our Eggplant we don't want to keep all of That salt on there So i've rinsed it and now i'm drying it Well Next we're grabbing our pan we're going To make it in today i'm using a jarred Sauce I usually do not use jarred tomato sauce But i wanted to make this recipe super Easy and fast to make If you're feeling so inclined to make Your own sauce I have a recipe for that and i will link It in the description box below After spraying the pan with non-stick Spray i'm spreading a thin layer of Sauce on the bottom Next we're going to grab our eggplant Typically when you think of eggplant Parmesan you're probably thinking Of an eggplant that's breaded in my Italian household growing up We did not bread our eggplant parmesan Not only does that make this recipe Super easy and fast to make It's also low carb you guys have got to Try this The eggplant does not have to completely Cover the bottom of the pan It will cook together just perfect so Don't worry And i'm spreading a thin layer of that Regatta cheese mixture

I also decided to add some fresh spinach So i'm just tearing it into bite-sized Pieces And adding a little bit of that fresh Mozzarella We're gonna add some sauce on top And then we're going to layer the Eggplant once again And repeat within we got the mixture The spinach the fresh mozzarella And the sauce and continue doing this Until you get all the way to the top of The pan or You run out of eggplant I decided to cut the eggplant into More like wedge pieces and i'll show you Here In just a sec how i'm doing that so i Literally just cut the eggplant right in Half Just to kind of make it fit a little bit Easier It does not have to be perfect trust me Guys it will cook perfectly The top layer we need some sauce And then a sprinkling of that fresh Mozzarella We're grabbing some aluminum foil and Cover it tightly We're going to grab our instant pot Add our water and the trivet I have this sling i absolutely love it If you don't have this you could also Make a sling out of aluminum foil

Lower it in grab our lid Make sure the silicone ring is on set it To ceiling High pressure for 12 minutes We're gonna allow five minutes of Natural pressure then we're gonna Perform a quick release When the pin drops we're gonna open the Lid remove Our perfectly cooked eggplant parmesan Uncover it now you can stop here it's Absolutely perfect But if you want to brown that cheese Just a little bit i highly recommend Sticking it under the broiler for about Five minutes How incredibly delicious does this look This recipe makes About four portions of eggplant parmesan That are absolutely perfect for me To bring to work for a quick lunch i Like to top my eggplant parmesan with Some fresh Basil and italian parsley I hope you enjoyed today's video and That you have a chance to try it Let me know any other recipe ideas you Have for a future episode In the comments below i'm going to leave A playlist of some delicious Easy recipes on the screen over here if You'd like to check that out Thanks so much for watching and i will See you in the next
