Easy INSTANT POT Fish Recipe│COD FISH Easy Recipe│Summer Recipe Series│Dining With Tara

INGREDIENTS:
4-5 oz Cod Fish Fillet
5 oz Sweet Potato
4 Garlic Cloves
1 Small Shallot
½ lemon with zest
1 tablespoon Fresh Dill
1 ½ oz Grated Pecorino Romano Cheese
2 tablespoons Fresh Parsley
1 tablespoon Butter
4 oz Asparagus
1 ½ cups Water
Salt and Pepper to tast
INSTRUCTIONS:
1. Zest lemon. Combine parsley (reserving a teaspoon), dill, lemon zest, and 1 garlic clove minced in a small bowl. Season cod with salt and pepper. Slice shallots. Place sliced shallots on a piece of aluminum foil that is sprayed with cooking spray. Add cod on top. Crumble butter on top of fish (reserving 1 teaspoon). Spread fresh herbs on top of fish. Add grated cheese to fish. Top with a slice of lemon. Fold foil around fish to form a packet.
2. Crush remaining garlic clove and place on a piece of aluminum foil. Drizzle with olive oil and add a pinch of salt. Close packet.
3. Dice potato into equal size pieces and place in a small heat proof glass bowl. Add a drizzle of olive oil, salt and pepper. Add remaining butter, parsley, and a teaspoon of grated cheese. Stir to combine.
4. Add water to INSTANT POT, and place a trivet on the bottom. Place small bowl of potatoes on the trivet. Place cod packet and garlic packet. Close the lid and set to sealing. Cook at HIGH PRESSURE for 6 minutes. Allow 5 minutes of natural pressure and then perform a quick release. Plate up fish and potatoes. Add a teaspoon of roasted garlic to the potatoes.
5. Add asparagus to a heat proof glass bowl and blanch for 1-3 minutes until desired tenderness. Top with a drizzle of olive oil, salt, pepper and a teaspoon of roasted garlic. Enjoy!

[Music] Hey guys welcome back to my channel if This is the first time you're here my Name is tara Today we are making the most delicious Instant pot recipe We're gonna make cod and potatoes inside Of our instant pot Super easy super delicious and you guys Are gonna absolutely Love it before we get started if you Have not already i would love for you to Be a part of this community you do that By hitting the red subscribe button That's right below this video and be Sure to click the bell icon That way you're notified each time i Post a new video If you guys are ready to make this Delicious instant pot cod recipe Smash that like button and let's jump Right into the video We're going to start by grabbing our cod I only have frozen cod if you have fresh Of course you could use that But if you have frozen like me i'm going To show you a quick hack to defrost it Quickly I place it in a bowl with some cold Water Set it aside for about 15 to 30 minutes Remove it from the water then i'm going To make sure i pat it Dry really well we don't want the cod to
Have Any extra moisture because it will Actually reduce the flavor And that's not what we're looking for of Course i'm drinking a dry red Next i'm grabbing a lemon and i'm going To grate some lemon zest Lemon zest is gonna add such freshness To this dish i'm gonna scoop up this Zest And set it in a bowl Next i'm gonna slice the lemon i Actually only need one Lemon slice for this but i sliced Several slices You can use as much as you like you can Always of course add it to A glass of water and that would be Delicious Save the other half of the lemon for Another recipe Now i'm grabbing some dill dill is such A fresh And wonderful flavor combined with cod If you don't have fresh dill you can Also use dried and if you don't like Dill You can skip this and maybe use some Basil instead Next we're going to grab our potato i'm Going to be using a japanese Sweet potato i love this type of potato Because it's not too sweet and it's Packed with nutrition
Feel free to substitute for any other Type of potato that you love As long as it's roughly the same size as The one i'm using today So i'm going to cut the ends off i'm not Peeling the skin because i love the skin In this recipe if you prefer to Peel it of course you can i'm going to Chop this roughly into equal size pieces The smaller you make them the more done The potatoes will be Now we're going to grab some garlic Cloves I'm using the smallest one and for this I'm going to just remove the skins And just roughly chop this You could of course use a garlic press For this but i already had my knife Dirty Add it to the bowl If you've been following my channel for A while you know i absolutely love Roasting garlic inside of my instant pot Because it's so quick And easy i usually roast the entire Garlic bulb Today we only need a few cloves so let Me show you another technique that is so Incredibly easy Using the back of the knife you're just Smashing down on the garlic cloves Just to kind of break them just a little Bit Put them on a piece of aluminum foil
Drizzle it with some extra Virgin olive oil and a little bit of Salt Then we're going to fold this up into a Little packet Then i'm grabbing some fresh parsley i Love Parsley parsley is such a delicious Component with this dish Add it into the bowl if you don't have Fresh of course you could use dried and I'm also adding some of this To the potatoes along with some salt and Pepper And a drizzle of olive oil give it a Quick stir Now i'm grabbing a shallot If you don't have a shallot you could Also use either a Fourth of a yellow onion or even a red Onion would work really Well and i'm just looking to just kind Of slice this up It doesn't have to be perfect Then we're going to grab another piece Of aluminum foil make sure you spray it So the cod doesn't Stick now i'm going to lay the cod down And i'm going to season it with some Black pepper and some salt I'm making sure i'm getting both sides Of it and then i'm going to place the Shallots On top of the aluminum foil and place
The cod on top Then i'm grabbing some delicious butter It would not be perfect cod without some Butter but that's of course just my Opinion Giving our little bowl a good mix And pour this mixture on top it looks Like a lot but trust me guys This is going to infuse so much flavor It's delicious Then i'm grabbing some pecorino romano Cheese if you do not like cheese on your Fish Of course you can skip it but if you do You guys are going to absolutely Love this it is going to create such a Delicious Like crust on top place on one of the Slices of lemon then we're going to Close the packet make sure you close it Really well I decided to add a little bit of butter To the potatoes Why not i already had the butter out you Could skip this if you want But it did give such a delicious flavor And of course i decided to add a little Bit of grated cheese then we're going to Grab our instant pot Put some water and our trivet place in The little bowl of potatoes Along with our packet of cod and our Garlic cloves If you don't have a bowl like this you
Can also just make a bowl out of foil And that would work really well too Close the lid make sure the silicone Ring is on And it's set to ceiling set it to high Pressure for six Minutes while the instant pot is cooking Let's prepare our vegetable so i have Some asparagus i've chopped The ends off and i'm laying it inside of This bowl Heating up some water on the stove It boils i'm adding it to the asparagus When blanching vegetables In the way that i'm doing here make sure You're using a Heat proof glass bowl to prevent any Kind Of burn or injury set this aside for About one to three minutes until it's to Your desired doneness Then we're gonna drain it now our Instant pot should be ready we've Allowed five minutes Of natural pressure perform a quick Release We're gonna open the lid look at these Potatoes They're cooked absolutely perfect let's Dress up our asparagus and potatoes to Be even more flavorful and delicious I like to drizzle some extra virgin Olive oil over the asparagus Hit it with some salt and fresh cracked
Black pepper then we're going to grab Those cloves that we roasted Squeeze them easily out of the skin grab Our Garlic press or you can just mash it With the back of the spoon because it's Very soft we're going to add a little Bit to the asparagus And to our potatoes the final step is to Grab our fish packet And carefully open the aluminum foil Because you don't want to spill any of Those Delicious juices you guys are going to Absolutely love This recipe i hope you enjoyed today's Video and that you have a chance to try It Let me know any other recipe ideas that You have In the comments below for a future Episode i'm going to leave a short Playlist of some delicious Summer recipes over here on the screen If you'd like to check that out Thanks so much for watching and i will See you in the next video Bye guys
