EASY INSTANT POT CHICKEN CURRY RECIPE | EASY VACATION COOKING

Today we are making chicken curry. I’ve made chicken curry before on this channel, but today we are simplifying the recipe! We brought our INSTANT POT on vacation – this is part three of our cabin cooking series. INGREDIENTS:
2-4 pounds of Chicken Breasts
8 ounces Red Curry Paste (2 jars)
15 ounces Full Fat Coconut Milk (substitute lite)
8 ounces Coconut Milk (optional)
4 ounces Water
Medium Yellow Onion
½ teaspoon White Pepper
1 tablespoon Garlic Bouillon
1 tablespoon Tomato Paste
12 ounces Frozen Cut Green Beans
10 ounces Frozen Corn
Squeeze of Lime

Rice:
2 cups White Basmati Rice
2 cups Water

INSTRUCTIONS:
Dice onion or puree in blender/food processor. Cut chicken into bite-size pieces. Set INSTANT POT to sauté on HIGH. Add a drizzle of oil, then add red curry paste. Sauté for 30 seconds stirring often. Add onions and sauté for 45 seconds. Add water and deglaze the bottom of the pot. Add chicken and stir to coat. Add coconut milk and stir. Add pepper, bouillon and tomato paste and stir. Place trivet inside the pot and a heatproof glass bowl. Combine rinsed and drained rice and water in the bowl and stir. Close the lid, press cancel on the INSTANT POT, then set to HIGH pressure for 5 minutes. Allow 10 minutes of natural pressure and then perform a quick release. Remove rice and trivet. Add frozen veggies and if using, additional coconut milk, and stir for 2 minutes. Enjoy!

[Music] Hey guys it's tara and welcome back to Another Video and another super delicious Instant pot recipe Today we are going to conclude our cabin Cooking series That's right we brought our instant pot On vacation the first week we made beef Stroganoff So delicious last week we made a pork And pasta in a tomato cream sauce Super easy so flavorful if you missed Either of those episodes i will link Them in the description box below so you Can check them out afterwards But today we're making chicken curry I've made chicken curry before on this Channel and while it's one of my Absolute favorite recipes it does Require A number of ingredients that you just Might not have if you're Vacation cooking so today we are Simplifying this recipe And making it so incredibly easy You guys are gonna absolutely love it Before we get started if you have not Already i would love for you to be a Part of this community you do that by Hitting the red subscribe button that's Right below this video Next week we are starting our fall Cooking series you do not want to miss

These episodes Be sure to click the bell icon that way You're notified each time i post A new video if you guys are ready to Make this super Delicious instant pot recipe smash that Like button and let's jump Right into the video [Music] We're going to start by chopping up our Onion so i have a medium-sized yellow Onion And of course we need to remove the skin First And then i'm going to chop up about a Quarter of this onion And the rest of it i'm going to place Inside of my vitamix Yes i brought my vitamix on vacation My husband absolutely hates chunks so I'm blitzing up most Of these onions set it aside grab our Chicken i'm using Chicken breasts and just dice it into Bite-sized pieces Then we're going to grab our instant pot Set it to saute on high Add a drizzle of olive oil add our red Curry paste To simplify this recipe we're going to Use a store-bought red curry paste i Love this brand of red curry paste i was Easily able to find it at the local Grocery store in the mountains of

North carolina where i was vacationing You can use any kind of red curry paste That you can find Just be sure to taste it to see how Spicy it is Because they do vary in the level of Spice I'm actually using two jars of red curry Paste Because i have quite a lot of chicken That i'm cooking i'm adding another Little Drizzle of olive oil so nothing burns Now i'm going to add the onion so i'm Adding both The diced up onion and the mixture from The vitamix Stir it for about 45 seconds and then We're gonna add a little bit of water Deglaze the bottom of the pot so nothing Is stuck We're gonna add our chicken now we're Not looking to saute the chicken here or Brown it We're really just looking to coat it in This delicious mixture Super easy we're gonna add our coconut Milk I'm using full fat you can use light if You prefer Once everything is stirred i'm gonna Kick the heat up a notch and i'm gonna Add some white Pepper i love using white pepper you can

Use black pepper also We're going to add some garlic bouillon I love Using garlic bouillon because it's so Easy also adding some tomato paste Tomato paste really ramps up The flavors highly recommend it we're Gonna grab our trivet And our heat proof glass bowl i love Using the pot and pot method so i can Have a complete Meal ready in only a matter of minutes i Was able to whip this dinner up from my Husband and four of our friends Who traveled with us on vacation in only A matter of minutes All you need is a trivet and some type Of a heat proof Bowl if you've been with me for a while On this channel you know i absolutely Love my glass bowl If you don't have a heat proof glass Bowl you can also use something like A stainless steel bowl and that should Still work Beautifully or if you prefer you can Just cook The chicken curry and just cook the rice Separately That works just as well We're gonna add our rinsed and drained Rice i'm using white basmati rice here Remember it's a one to one ratio stir it Up

Then we're gonna grab our lid make sure The silicone ring is on Set it to high pressure for five minutes We're gonna allow ten minutes of natural Pressure perform a quick release And when the pin drops open up our lid We're going to remove our rice And trim it and get to work on this Delicious curry So i'm going to add some frozen veggies Because it's so easy so i'm using Already cut Frozen green beans and also frozen corn You can use Any kind of frozen veggies that you like It's so Simple i'm also adding a little bit more Coconut milk add as much or as little as You like Such a quick and easy recipe you guys Have got to try this I hope you enjoyed today's video and That you have a chance to try it Let me know any other recipe ideas you Have in the comments below for a future Episode i'm gonna leave a playlist of Some delicious Easy recipes on the screen over here in Case you'd like to check that out Thanks so much for watching and i will See you in the next Video bye guys
